Kimura-san has been a professional tuna dealer at Tokyo’s Toyosu market, (previously called as Tsukiji Fish Market) for over 20 years. Everyday, he takes 2 tunas from the auction, one frozen and one fresh. 

“Although I have been in the market for over 20 years, still I feel I am a fresher and younger here. There are bunch of masters in their 80s or 90s, and their skills to pick the right fish are simply amazing. Yet, I am very happy to share my knowledge to everyone.”
